Gigi’s eggplant rollatini

The memories we make while cooking, and eating with family stick with us for a lifetime. This week we are celebrating the memory of one of our team members grandmother by adding her recipe to the menu. I’m sure there will be tears in the kitchen this week. But we know you will enjoy this one! Fried eggplant, rolled and stuffed with ricotta, cheese, and seasoning. Baked in marinara.. Delicious!
